WHere is an easy version of a drink from a new menu. This is a party-sized prepared mix which is packed full of flavours of a holiday season, rendering it excellent for hosting a festive gathering. Any leftover syrup you can use for breakfast cocktails, sweets, or to make additional servings of the drink.

Makes enough for 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
Making the Citrus Syrup: Put all the components into a pan, bring to a gentle boil, stirring so the sugar melts. After that, take off the heat and let it to reach room temperature completely. Decant to a sterilised bottle, close it and refrigerate it in the fridge, it can be stored for up to one month.
Preparing the Premix: Mix the specified liquid ingredients into a big jug, let it rest for 60 minutes, then pass it through best through muslin, to ensure it's fully clarified.
For serving: Add 85ml from the batch mix into a stirring glass filled with ice, and stir lightly for one minute to chill. Strain into an cold coupe glass or equivalent, decorate with a few cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
